So disappointing :(

For dinner tonite I made a beef roast. I worked so hard on it. For Christmas I got a remote meat thermometer that I tried out for the first time. Well... it didn't work. It's not accurate, and it tried to tell me the meat was done in less than an hour. So I checked it with my old meat thermometer and it read 120 degrees... NOT 160 like the other one. I figured it might have been positioned poorly, so I re-adjusted it, and the whole time I'm jabbing new holes in the meat and the juice is just running out everywhere. Needless to say, when it was finished in another hour, it was so dry. The temp was *just* starting to read 160, so I knew I hadn't overcooked it, just over-poked it. Booo. I worked so hard. I also made biscuits where were less than mediocre. The salad was good... can't go wrong with lettuce and dressing. Ugh. I hardly ate any of it. Needless to say, I had a proper dinner of a tuna melt and veggie straws when I returned home from water-aerobics. I was FAMISHED!!! And my tuna melt & veggie straws never disappoint :)

Ewww! Really now?

Nicole and I had to go grocery shopping after I picked her up from school today, and of course the second we get there, she needs to go potty. So we go in the bathroom, and 2 of the three stalls are occupied. So we go together in the last one, and while we're in there, I hear both ladies in the other stalls flush... and just walk out without washing their hands!!! Really people? Is it that hard? I just shuddered and hoped I wasn't buying the oranges that they just touched.

Yuck.

Full of Emotion

Nicole is so sensitive about the funniest things. Here goes our last emotional conversation:

Nicole: Mommy, I don't want to go to the dentist anymore.
Me: Why not?
Nicole: Cause I didn't like the stuff she painted on my teeth.
Me: Why? Did it taste bad?
Nicole: No. It made my whole body feel weird.
Me: (with my spidey senses now on full alert) How did it make your whole body hurt?
Nicole: I don't know. It just did?
Me: (puzzled) your whole body hurt?
Nicole: No, just my tongue.
Me: Oh... okay. Did it just taste funny?
Nicole: Yeah. Did you and Daddy have to get your teeth painted?
Me: No. They don't paint permanent teeth. You still have baby teeth, so that's why yours get painted.
Nicole: *silent*
Me: (oh dear lord what is coming)
Nicole: *slowly starts sobbing hysterically in the back seat*
Me: Honey! Why are you crying? What's the matter??
Nicole: They're not baby teeth, they're big girl teeth.

For real? Gotta love her :)

Here's my first daily photo. This is what I made for dinner (I'm mad that I forgot to photograph it before I started chowing down - hence the reason my plate is messy). It's sun-dried tomato & spinach stroganoff. I had some left over grilled shrimp from New Years Eve, so I threw that in as well - delish! I'm so proud of the hubby for trying it, cause it's so NOT his thing. But he ate a whole plate of it!!

So I'm a day late...

But it's a leap year! So the "365" blog would actually be a "366" which just sounds weird. So I'm okay with starting a day late. Cause then it can really be a true "365" blog.

(In all honesty, I wanted to start last night, but the in-laws were over and we got to bed kinda late. So this worked out to be a better idea overall.)

So today is kind of a sad day, as I've been off work for 11 days now, and will be returning tomorrow. What is more exciting is that I've been off with the hubby and Nicole this past week too. So we've had tons of fun family time... but we've also all been sick with colds since the day after Christmas. Can't get much more fun than that. So today, we'll be hitting the plateau of fun by heading out to the laundromat to wash comforters. Woo hoo. After that we'll be headed to the Target to find jeans for Little Miss Long Legs, and then home to relax in the sea of Christmas Presents... aka - Barbie World. I'm trying a new recipe tonight which I'm super excited about. And then I'm off to Zumba, and after that I'll have one more relaxing night with the Hubs before it's back to the old routine. Ugh... I'm so not looking forward to it.
